Healthy Oat Cookies

The healthy oatmeal cookies- no added sugar, no butter, no flour, no eggs.

I didn't think these will be good, but they are! The sweetness comes from the ripe bananas and chopped chocolate, and they are just right. If you prefer a little bit more sweetness, then add a bit of brown sugar or honey.

Here's the recipe:

Banana Oat Cookies

Makes about 3 dozen bite-sized cookies.

3 large, ripe bananas, well mashed (about 1 1/2 cups)
1 teaspoon vanilla extract
1/4 cup olive oil
2 cups rolled oats
2/3 cup almond meal
1/3 cup walnuts, roughly chopped
1/2 teaspoon cinnamon
1/2 teaspoon fine grain sea salt
1 teaspoon baking powder
6 - 7 ounces chocolate chips or dark chocolate bar chopped

almond slices, sesame seeds

Preheat oven to 350 degrees

1. In a large bowl, combine bananas, vanilla extract, and oil. Set aside.
2. In another bowl whisk together the oats, almond meal, cinnamon, salt, and baking powder.
3. Add the dry ingredients to the wet ingredients and stir until combined. Fold in the chocolate chunks/chips and walnuts.
4. Spoon the dough out, about a tablespoon each. For each one, you can roll it in sesame seeds if you like, or put almond slices on it too, to make it look nicer.
5. Bake 15 minutes for a soft cookie, or 25 mins for a crunchy on the outside, soft on the inside cookie.
